Simple Broccoli Stir Fry with Smoked Oysters

This quick and delicious broccoli stir-fry is a great meal to turn to when you’re short on time but still need something nourishing and delicious. Take care to not overcook the broccoli, as the beauty of this dish lies in its al-dente bite. 

Ingredients: 

  • 1 tablespoon neutral high-heat cooking oil 
  • 1 head broccoli, cut into small florets
  • Fine sea salt to season 
  • 2-3 cloves garlic, sliced 
  • 1 can Ekone original smoked oysters
  • 1 teaspoon tamari or soy sauce, plus more to taste 
  • 2 tablespoons orange juice 
  • A generous pinch red pepper flakes 
  • 2 tablespoons finely sliced scallions 
  • 1 tablespoon toasted sesame seeds 
  • Cilantro to garnish 

 Instructions:

  1. Heat a heavy bottomed frying pan over medium-high heat.
  2. When the pan is just beginning to smoke, add the oil and immediately add the broccoli, giving it a quick toss to coat in the oil. Season with a small pinch of salt, and cook undisturbed for 2-3 minutes.
  3. Once the florets have begun to char around the edges, lower the heat to medium-low, add a tablespoon of water to the pan, and cover with a lid to trap in the steam. Cook for another 2 minutes, agitating the pan occasionally to prevent the broccoli from burning, until the broccoli is just cooked through.
  4. Remove the lid and add the garlic and smoked oysters. Cook for another minute or so, until the garlic is aromatic and the oysters have heated through.
  5. Remove the pan from the heat and add the tamari, orange juice, and  pepper flakes. Toss to coat, then taste for seasoning and adjust with another dash of tamari or squeeze of orange juice. 
  6. Scatter over the scallions and sesame seeds. Garnish with cilantro. Enjoy as is, or served alongside steamed rice.
