
Breakfast Gochujang Salmon Cakes

Hit pause on your boring breakfast routine and gussy up the beginning of your day by mixing up a batch of our gochujang salmon cakes – a perfect accompaniment with a simple salad and a couple fried eggs. Feel free to make the cakes and form them the night before you plan on frying them, so all you have to do is cook your cakes and enjoy!
Ingredients:
- 2 cans Ekone Smoked Salmon
- 2 egg yolks
- ½ cup mayonnaise
- 2 tablespoon gochujang
- 2 garlic cloves, grated
- 2 teaspoons furikake
- 1 teaspoon lemon pepper
- 1 teaspoon black pepper
- 2 scallions, chopped
- ¾ cup panko breadcrumbs
- 1 tablespoon vegetable oil.
Instructions:
1. Simply thoroughly mix your Ekone Smoked Salmon with all of the listed ingredients above and form them into small, three inch by half inch patties and set aside on a prepared, lined baking sheet.
2. In a skillet, heat oil over medium heat and cook each salmon cake on both sides until lightly browned (about three minutes per side) and serve over a salad, and eggs.
