Tomato and Nectarine Salad with Smoked Mussels

This salad is a celebration of summer produce in its prime. The marriage of juicy nectarines and golden yellow tomatoes is a seasonal classic. We’ve taken our rendition for a smokier spin by adding a tin of our meaty smoked mussels and dressing the lot in a bright, smoked paprika spiced vinaigrette.
1 teaspoon sherry vinegar
2 teaspoons olive oil
½ teaspoon maple syrup
¼ teaspoon smoked paprika
½ teaspoon red pepper flakes
Pinch of fine sea salt
1 medium yellow heirloom tomato, cut into bite size pieces
1 ripe nectarine, pitted and cut into bite size pieces
1 can Ekone Smoked Mussels
Flaky salt to season
Torn basil to garnish
To make the dressing, combine the sherry vinegar, olive oil, maple syrup, smoked paprika, red pepper flakes and a pinch of salt in a small bowl. Whisk to emulsify.
Add the tomato, nectarine, and mussels to a medium mixing bowl and pour over the vinaigrette. Gently toss to dress all of the nooks and crannies. Spoon the salad onto a serving plate. Season with a pinch of flaky salt and garnish with torn basil.
