Garlic Butter Spaghetti With Smoked Mussels

This buttery spaghetti is a garlic lover’s dream. Its a perfect weeknight meal for one, but can also be scaled up for many. The impressively short ingredient list provides big flavor, largely thanks to the convenient luxury of a tin of smoked mussels.
Serves 1
Ingredients
Sea salt to season
4 ounces spaghetti
2 tablespoons butter
5 garlic cloves, minced
1 tin Ekone Original Mussels
Chopped parsley, to serve
Instructions
Bring a pot of water to a boil. When boiling, season generously with salt. Cook the spaghetti according to the package directions until it’s just shy of al dente.
Meanwhile, heat the butter over medium heat in a medium frying pan. Add the garlic and cook, swirling the pan frequently to prevent burning, for 2 to 3 minutes - until the garlic has softened and is deeply aromatic. Add the entire contents of the tin of mussels, and swirl to coat in the garlic butter.
Using tongs, add the almost al dente pasta to the pan alongside a generous ladleful of pasta water. Bring everything up to a simmer, and assertively toss the pasta with tongs or a wooden spoon as you nudge the pan back and forth with your other hand. This motion helps to release the pasta’s starch, providing for a luscious sauce that’ll coat every noodle like a warm hug. Once the pasta is fully cooked and properly glossed in garlic butter, take it off the heat.
Serve with a scattering of chopped parsley.
