​ Smoked Oyster and Cucumber Sandwich

Ingredients:

  • 1 can Ekone Habanero Smoked Oysters, finely chopped
  • 1 English or Persian cucumber, peeled and thinly sliced lengthwise
  • ⅓ cup whipped cream cheese (add more if needed)
  • 2 lemon wedges
  • 4 slices white bread or Japanese milk bread (shokopan)
  • Salt and pepper, to taste

Instructions:

  1. Prepare the cucumber: Peel and slice cucumber thinly (about ⅛ inch). Lightly sprinkle with salt and set aside.
  2. Prepare the oysters: Finely chop the Ekone Habanero Smoked Oysters. Add fresh lemon juice to taste.
  3. Assemble one bread slice: Spread half the chopped oysters on one slice of bread.
  4. Prepare the second bread slice: Spread cream cheese evenly (about ⅛ inch thick) on another slice of bread. Season lightly with salt and fresh cracked black pepper.
  5. Add cucumber: Arrange cucumber slices over the oysters on the first slice.
  6. Assemble the sandwich: Place the cream cheese-covered bread on top of the cucumber side. Press gently.
  7. Cut and serve: Slice the sandwich in half. Repeat steps for the second sandwich.

Yields: 2 sandwiches
