Each tin begins with Pacific oysters regeneratively grown by Taylor Shellfish Farms and traditionally prepared at the Ekone smokehouse, both located in Shelton, Washington. The oysters undergo Ekone's signature four-hour smoking process, a slow, deliberate method that develops their delicate texture and distinctive flavor. Once perfectly smoked, the oysters are hand-packed and finished with Durant's premium olive oils.
The Koroneiki Extra Virgin Olive Oil highlights the oysters’ natural sweetness, with aromatic notes of tomato leaf and green tomato, complemented by hints of green banana, endive and toasted walnut, followed by a medium peppery finish. Koroneiki is a Greek olive variety, and Durant’s Koroneiki Extra Virgin Olive Oil was recognized as a 2024 JOOP Gold Award Winner at the Japan Olive Oil Prize competition.
The Jalapeño Fused Olive Oil offers a gentle warmth and vibrant complexity, achieved by crushing fresh jalapeños and olives together during production, creating a bright, integrated heat that complements the smoky richness of the oysters.
